Money Intuition & My Turkey Meatball CrockPot Surprise!

I understand how the internet works to some extent. What I post today you will find tomorrow and the information will be outdated. ahhhh....BUT that is not going to stop me from sharing what has really lit a fire under my butt these last few days. Because of Summer, I have downloaded a "Money Mojo" from her mother. I laughed myself silly with tears listening to her interview with her mother Venus Andrecht. Then I hopped on the phone real quick to tell my parents and sent them the link to watch the interview.



Stephanie O'Dea was interviewed. I had never heard of her before but again, because of Summer, I came across a person and a blog that I will be returning to again and again and again. CrockPot recipes!!! My favourite way to cook. 
We had ground turkey in the fridge to concoct something with so I searched her blog and found an Apple Cheddar Turkey CrockPot Recipe.

The thing was I had to adjust it due to not wanting to go shopping. Here is what my "surprise" looked like before it was cooked.


Here is the recipe I used for myself (based on Stephanie O'Dea's recipe) 

  •                        1 1/2 pound extra lean ground turkey (I think*)
  •          1 egg
  •          1 tsp kosher salt
  •          1 tsp ground black pepper
  •          1 tsp thyme
  •          1 red delicious apple, peeled and shredded
  •          1/2 cup crumpled up feta cheese
  •          1/2 cup dried unsweetened cranberries


Directions (feel free to adjust to your liking)

In a large mixing bowl, I put the small ingredients in and then added the turkey and mixed with my hands. When my husband came home, I found out I was to put the turkey in first then add the ingredients. Oops…(my husband was a chef for twenty odd years and yes he does 99.9% of the cooking) *We buy our ground turkey at Costco. It comes in four individual packages and the cost is between $20.00 and $25.00 Canadian.

Make golf-ball sized meatballs, and place them gently into your crockpot if you are like me and like to count and line things up. I used too big of a crockpot, but that is the only one we have. Next time I am going to fiddle with the recipe some more and make lots to freeze. Feel free to stagger-stack the meatballs on top of each other because they easily come apart when done.

Cover and cook on high for 4-5 hours, or on low for 5-9 hours. Depends on how many meatballs and the size of your machine. The fuller it is, the longer it will take to cook. Since I decided to do this after lunch, I opted for the four hours on high. They were finished at 3.5 hours.
               
My Thoughts

Next time I will use way more turkey and make lots and lots because they were so good. Yum! And...I will use Old or Medium Cheese and try the green apple instead of red. All in all I was very happy with this Turkey Meatball CrockPot Surprise and so was my husband.
